What the parser actually does
A statement line is a date, a merchant string and an amount. Dinarko reads the merchant out of the register text, assigns a category, chains the running balance, and — when you scanned the receipt — puts the items behind the total.

Why import more than one month
A single statement answers "what did I spend". Several years answer "what is this costing me, and since when" — which is the question that changes a decision.
Recurring charges are detected across statements, and projected forward: what the active ones alone will take out of the account next month, and the month after.
Category totals plotted month by month, with income against expense and the balance over time — so a category that grew 30% over two years is a slope, not a number you have to remember.
Merchant patterns become rules: once a name maps to a category it stays mapped, across every statement you import after it, including the ones from before.
Where you scanned the fiscal receipt, the line stops being one number: item by item, priced against what the same products cost at the other chains that day.
